The brewing process of whisky is as follows:

1. Germination: first of all, the wheat or cereal after removing impurities is soaked in hot water to germinate, and the time required varies with the variety of wheat or cereal.

2. Grinding: the germinated wheat or cereal stored for one month is put into a special stainless steel tank to be mashed and boiled into juice, which takes about 8 to 12 hours. Generally, in the grinding process, the control of temperature and time can be said to be very important. Too high temperature or too long time will affect the quality of wort (or cereal juice).

3. Fermentation: the process of adding the cooled wort to yeast for fermentation. Since yeast can convert the sugar in wort into alcohol, the liquid with alcohol concentration of about 5% - 6% will be produced after the fermentation process is completed.

4. Distillation: Generally speaking, distillation has the effect of concentration. Therefore, when wheat or cereals are fermented to form "beer" with low alcohol content, The whisky is called "new wine" when the alcohol concentration of whisky is about 60% - 70%. The distillation method used for wheat and cereals is different. Malt whisky made from wheat adopts single distillation method, that is, the secondary distillation process is carried out in a single distillation vessel, and after the second distillation, the condensation flow is changed Wine out of the head to pinch the tail, only take the middle of the "wine" part of the new whisky.

In addition, whisky made from cereals is continuously distilled.

5. Aging: after distillation, the new wine has to go through the aging process, so that it can be aged in oak barrels, absorb the natural aroma of plants, produce beautiful amber color, and gradually reduce the strong stimulation of high concentration alcohol.

6. Mixing: due to the variety of wheat and cereal raw materials, the whisky produced has different flavor.

7. Bottling: after the mixing process is finished, the remaining is bottling. But before bottling, the blended whisky should be filtered again to remove impurities. At this time, the automatic bottling machine can pack the whisky into each bottle according to the fixed capacity, and then paste the trademark of each manufacturer before packing and selling.
